Nothing beats the taste of freshly cooked chicken, slowly fried on coals.

Roasting is a style of cooking in which meat is put on a long skewer and rotated around a heat source such as fire, charcoal or barbecue. As the meat is constantly turned over, it provides a homogeneous cooking environment. It also allows the chicken to cook in its own juice and allows it to be watered as desired during the cooking process.

Chicken is one of the varieties of poultry meat, which is one of the most widely used meats in the world. Chicken has several health benefits. Chicken is high in protein, low in general and saturated fat and is a good source of several B vitamins.

Below is a step-by-step guide to grilling chicken.

Step 1: Break the chicken

Chicken brine is one way to increase the humidity and tenderness of the chicken. Soaking the chicken in a mixture of salted water causes muscle fibers to lose some of their ability to contract during cooking, leading to more juicy meat. Add the following to cook the brine:

3 litres of water

1/2 cup table salt

1/4 cup sugar

2 bay leaves

Heat the water and make sure that the salt and sugar have dissolved. Allow the brine to cool to room temperature and add the chicken to the brine. Cover and refrigerate overnight.

Step 2: Prepare a roster

There are several methods that you can use to grill chicken. I use a grill burner with a section under the grill, where thermal pellets, charcoal or wood can be used as a cooking medium. Wait at least an hour until the coals are formed and the flames go out (do not cook on fire, as it will cause goosebumps).

Step 3: Prepare the mark

The outline can keep the chicken moist during cooking and give the meat an extra flavor. Add the following:

Juice of 3 lemons

4 crushed garlic cloves

1 cup olive oil

Salt and pepper

Fresh parsley

Step 4: Put the chicken on a baking tray.

Cut the lemon in half and place each half in the center of the grill. So the chicken will be held in the center of the grill during cooking. Place the chicken in the frying grill and tie the wings and thighs to prevent excessive movement when flipping (use a suitable baking twine). Grease the chicken with a brush and ready!

Step 5: Cooking chicken

Put the chicken on fire and clean every 20 minutes. Try to keep the grill temperature as constant as possible by adding a small amount of fuel (pellets, wood or charcoal). It takes 1 to 2 hours to cook the chicken, depending on the size of the chicken. The meat is cooked when the deepest part of the chicken (usually breast) reaches 74 degrees Celsius. Once the temperature has reached, remove from the heat and let stand for about 30 minutes. Remove the wire, cut the chicken into pieces and enjoy!
