How to Make Vegetarian Shish Kabobs
It is always difficult to decide what to give vegetarians when they invite them to a kebab, because kebabs are traditionally cooked from meat. Vegetarian kebabs with rice are the perfect and healthy answer to your vegetarian dilemma and a great side dish at any barbecue.
Food on a stick seems tastier, and vegetable kebabs are not only delicious, but also very easy to prepare and versatile enough for grilling.
You’re going to need:
Courgette
Whole mushrooms
Whole cherry tomatoes
The eggplant
Pepper
Pumpkin
Whole pearl onions
Pineapple (optional)
Skewers for metal or bamboo kebabs
To make mustard rice sauce for your vegetarian kebabs you will need:
1 1/2 tablespoons mustard
1 1/2 tablespoons white wine vinegar
10 ml olive oil
Freshly ground black pepper
Salt to taste

Preheat the grill or oven. Wash all the vegetables and slice the peppers, eggplant, zucchini, pumpkin and pineapple into more or less equal parts. Be sure to keep mushrooms, cherry tomatoes and pearl onions intact.

Alternately put vegetable cubes on skewers between different vegetables to keep your vegetarian skewers attractive.
Step 3
In a small bowl, whisk the ingredients for the rice mustard sauce. Grease half of the sauce on the skewers with a brush.
Step 4
Place the vegetarian kebabs on the grill or in the oven and fry or bake for about 10-15 minutes. After 15 minutes, turn over the skewers, add the rest of the whitewash and cook or fry for another 10-15 minutes.

Secrets and tricks:
The Italian dressing is a delicious marinade for vegetables. For the best result, marinate the vegetables in the sauce overnight.
It is always recommended to pre-cook denser vegetables such as potatoes, zucchini, peppers and carrots before putting them on a skewer, as you may not fully cook them when you put them on the gas grill.
If you plan to use bamboo skewers, soak them in water for about 1 hour before grilling them so that they do not burn.
When using metal skewers, lightly grease them with oil or sprinkle with non-stick cooking spray before ingingled.
If your vegetables continue to slide on our skewers, use two skewers instead of one.
Leave a small space between the pieces so they can prepare properly.
Do not put products with different cooking times on the same skewer, as it will burn some products, and others still raw.
If you do not plan to use the sauce for polishing when cooking vegetable kebabs, soak the vegetables in water for about 60 minutes so that they do not dry when you cook them on the grill.
